For three to four weeks every spring, restaurateurs and fishmongers around the globe celebrate the opening of the Copper River Salmon season. To ensure that the freshest of the year’s catch will end up on their tables, they go so far as to contract fisherman and charter airplanes to the area around Prince William Sound and the town of Cordova, Alaska. The firm red-fleshed fish navigate 300 miles of rushing river to make the trip and have a distinctive rich and nutty flavor. They’re also packed with omega-3s, which are said to enhance brain function and cardiovascular systems.
