WHERE’S ROCCO? If you can’t find chef Rocco DiSpirito in the kitchen at Union Pacific presiding over his staff, check the basement. That’s where a team of photographers and food stylists have been holding the 32-year-old hostage, furiously shooting the art for his cookbook, “Flavor,” which hits bookstores in November 2003. During Friday’s lunch hour, DiSpirito — butcher’s knife in hand — was certainly well equipped to break away. “I’ve had this one since I was 14,” he said as he handled the blade while prepping for a shot of him dicing some greens. For the record, the pretty-boy chef did not get a manicure for those close-ups of his hands, insisting, “I want this to be real deal.””
