HOPE SPRINGS

Las Vegas imports culinary treats and fine drink from around the world, but Wolfgang Puck’s Springs Café is dedicated to green dining using organic ingredients.

Springs Café in the Las Vegas Springs Preserve features a menu using fresh seasonal ingredients from regional producers and growers, with dishes such as vegetable pizza and papardelle with asparagus and black truffles. The happy hour menu features a Mexican white lettuce wrap and heirloom tomato water with poached sea scallop, to be served alongside the signature Zizag cocktail made with citrus vodka and fresh orange and grapefruit juices. The 6,500-square-foot cafe offers indoor and outdoor dining with panoramic balcony views of the towering casinos along the Las Vegas Strip.

Only three miles from the Strip, the Springs Preserve is the site of the original desert oasis that was Las Vegas. The 180-acre national historic site also hosts a farmers’ market and live concerts every Thursday.

GARDEN STATE STORY

Frank Sinatra, a boy from Hoboken, N.J., helped put Las Vegas on the map. Now Las Vegas is hosting the musical “Jersey Boys” at the Palazzo Resort Hotel Casino opening.

“Jersey Boys” is based on the saga of Frankie Valli and the Four Seasons, four guys from Newark who became one of the biggest singing groups of the Sixties with hits such as “Sherry,” “Big Girls Don’t Cry” and “Can’t Take My Eyes Off You.”

“Jersey Boys” opened on Broadway in November 2005 and won the Tony Award for best musical. The cast also won a Grammy Award for Best Show recording.

“Jersey Boys” inaugurates the Jersey Boys Theater at the Palazzo Hotel.

MARVELOUS NIGHT FOR A MOONDANCE

The Satellite Bar is a new nightspot with celestial views and renowned DJs atop the Palms Casino Resort.

Housed inside the Moon nightclub, the Satellite Bar is the latest addition to the two-year-old Palm Casino’s Fantasy Tower, which also boasts a Playboy Club. The Moon nightclub and Satellite Bar interiors are a cross between “Barbarella” and “Saturday Night Fever,” featuring walls and floors of glass tiles that change color via a computerized lighting system and a retractable roof that allows for stellar night views from the dance floor.

The Satellite Bar is set apart from Moon nightclub by yellow-glass mosaic walls. Its monthly lineup of DJs, such as Chicago’s Frankie Knuckles, is flown in to spin in the bar’s intimate setting.

For imbibing, the Satellite Bar’s signature cocktail is the spaced-out Tourment Trance made from the French brand Tourment absinthe, Apple Pucker and cranberry juice. A $20 cover charge includes entry to the Satellite Bar and Moon.

DOS CAMINOS

Dos Caminos serves contemporary Mexican food and organic margaritas in a Mexico City-on-the-Hudson environment.

Dos Caminos Las Vegas is the fourth and only outpost of the restaurant chain outside Manhattan. Owned by the New York-based B.R. Guest Restaurants (Fiamma in New York), Dos Caminos also plans to offer pizzazz with its bottle-service lounge featuring DJs, private cabanas and a late-night menu.

The Rockwell Group designed the 700-seat restaurant’s interior by combining city slickness with rustic Mexican touches. Iridescent gold and fuchsia tiles contrast with panels from Mexico City street markets and ceramic skulls on opposing walls. A serpentine chandelier hangs over a model of a Mayan temple that separates the dining area’s snakeskin leather banquettes.

Dos Caminos executive chef Scott Linquist takes pages from his “Mod Mex” cookbook with plates such as rib eye steak alambre or Chilean sea bass Veracruzano. The guacamole is made to order in a traditional molcajete. The late-night dining menu features bites of ceviche, tacos and a cazuela of queso fundido with chorizo and roasted chiles or wild mushrooms and huitlachoche — a Mexican corn truffle.

For tequila fans, Dos Caminos updates the margarita with trendy ingredients such as blueberry-pomegranate and frozen prickly pear in addition to organic and seasonal blended versions.
