Recipe: Miranda Kerr’s Muffins

Beauty editors swooned over Aussie supermodel Miranda Kerr's homemade muffins.

Aussie supermodel Miranda Kerr is launching her organic skin and body-care line, Kora, Stateside in September. She held the press event in her Upper East Side duplex, where beauty editors swooned over her homemade muffins.

2 cups freshly ground certified gluten-free oatmeal
1⁄2 cup chopped walnuts
2 teaspoons gluten-free baking powder
1⁄4 teaspoon baking soda
2 tablespoons chia seeds
3 eggs
1⁄4 cup goat’s milk yogurt
1⁄2 cup organic apple juice
4 tablespoons coconut oil
1 1⁄2 teaspoons ground cinnamon
1⁄2 teaspoon vanilla bean powder
1⁄4 cup honey
2 large green organic apples, chopped
2 ripe bananas, sliced


In a food processor, grind the oats into a flourlike consistency and add the walnuts.
Place oat mix, baking powder, baking soda and chia seeds in a mixing bowl.
In a small bowl, lightly beat two eggs and one egg white. Add the yogurt and apple juice.
On very low heat, mix the coconut oil, cinnamon, vanilla and honey until it has a syruplike consistency. Combine with egg-yogurt-juice mixture.
Add this wet mix into the dry mixture, and slowly fold in the apples and bananas.
Line a muffin pan with paper liners or lightly grease the cups and fill 3⁄4 full.
Bake at 350 degrees for 30-40 mins. or until a toothpick inserted in the center of a muffin comes out clean.
Allow the muffins to cool for 15 mins. before serving and sprinkle with cinnamon.
