EAT AND SHOP: Dining options at Hudson Yards are all but guaranteed to be sophisticated considering that French Laundry and Per Se chef Thomas Keller is opening a classic American restaurant and advising the project on the selection of the other 11 dining establishments slated to open in 2018 at the one-million-square-foot Shops and Restaurants at Hudson Yards on Manhattan’s West Side.

Related Companies and Oxford Properties, which are developing Hudson Yards, said José Andrés and Costas Spiliadis will be opening Spanish and Greek restaurants, respectively, at the vertical shopping center, which will be anchored by Neiman Marcus.

Andrés, who won a James Beard award in 2003, will feature modern Spanish cuisine at his as yet unnamed restaurant.

Spiliadis will unveil Estiatorio Milos, a Greek seafood restaurant with open market and open grill areas. Spiliadis operates restaurants in New York, Miami, Las Vegas, London, Montreal and Athens.

Keller is identifying chefs for the project along with Kenneth Himmel, president of Related Urban, which developed The Shops at Columbus Circle, where Keller’s Per Se is located.
