The new 1 Hotel South Beach may be large in scale — 426 rooms, four pools, a trio of Tom Colicchio eateries — but the eco-friendly concept is minimizing its footprint to a mere flip-flop.

Outdoing its fancy water filters, complimentary Tesla rides and organic decor of driftwood and living walls, the hotel, which made its debut in March, has tapped a full-time corporate director of impact, who’s a taskmaster for sustainability.

Within the hotel, at 2341 Collins Avenue — along the ocean in Miami Beach — Colicchio has his first Florida restaurant, Beachcraft, which opened in June, as well as Tom on Collins lobby bar and the Sand Box pool café. Beachcraft’s seasonal dishes feature locally caught fish, a raw bar and antibiotic-free meats, with more of a Latin American influence (whether chiles or citrus) than at his Craft flagship in Manhattan. His 13-foot, oak-fired grill tackles much of the health-minded menus, where egg-topped quinoa, fava bean and freekeh porridge is truly the breakfast of champions, and supper starts with braised octopus, avocado and jicama. Cheat a little by pairing the latter with a Beefeater gin and Montenegro amaro-based Euro Trip.
