Sipping Aloe: Come summer, beach bags won’t be the only place to find aloe vera — it’s also become an unexpected ingredient in the cocktails of buzzy Manhattan restaurants. At health haven Café Clover, the namesake tonic is made with Hendrick’s cucumber, basil, grape, aloe vera, agave and lemon. Mexican newcomer La Contenta offers a Pulque de Fresa with pulque, brandy, Combier royal, aloe vera, strawberries and lemon. And at Major Food Group’s High Line home run Santina, bar director Thomas Waugh serves up the Aloevation, with vodka, aloe vera and violette. “It’s a very refreshing cocktail and the aloe gives it an almosts a line like mouth feel, which I personally really enjoy,” he says. “Also, it’s good!”
